Day 8: Say hello to Gil.

Breakfast: Omelette and berries (I forgot to take a picture)

Andy's first day back at work was today, so I made him breakfast and brought it to him at work on his break......and forgot to document it. :)


Lunch: Chicken legs and spring salad


Chicken:
Chicken legs (a package of 5 is only $2 at Trader Joe's), marinated for a few hours in the apple cider vinegar dressing I made, then cooked at 350 degrees for about 40 minutes.

Salad:
Spring mix
cucumbers
sugar plum tomatoes
apple cidar vinegar dressing



Dinner: Garlic citrus tuna steaks and squash


Tuna Steaks:
Olive Oil
crushed garlic
salt and pepper
lime juice

Heat a pan over MedHi heat, add a bit of olive oil and crushed garlic. Add the steaks, and season with salt and pepper. Once the steaks are done, pour a bit of lime juice over them right before plating them.


Squash:
butter
salt and pepper
squash

Cut the squash in half lengthwise, then slice. Add a little butter to a pan over MedHi heat, add the squash, then season with salt and pepper.



Today was Andy's first day back at work. It went pretty well (diet-wise). He brought carrots, almonds and berries with him as a snack, and I brought him an omelette for breakfast. But since we've made it into the second week, it was a much smoother transition than the first time.

We're hardly ever hungry anymore, even at meal times. The food we're eating is actually fueling our bodies, so we need a lot less. We even had the energy to make a new addition to the family:

Say hello to Gil. We had fish for dinner tonight in his honor.
